Custom flavor creation and application

In our laboratories in Liège, our flavorists develop your custom flavor and validate it under the real conditions of your product. A flavorist is assigned to your project and follows it from start to finish. This page describes the know-how deployed. The workflow, milestones, and deliverables are detailed on the Your Project page.

Our approach: a craft guided by science

A flavor is not something you pick from a catalog. Each brand, each matrix, each market calls for its own formulation. That is what “custom” means: a method that combines sensory sensitivity and analytical rigor.

Our expertise is based on three competencies built since 1983: mastery of aromatic raw materials and their interactions, a fine understanding of the product matrices (beverages, dairy products, sweet snacks, confectionery, alcoholic applications) and a sensory culture nurtured by more than 40 years of practice.

These three skills come together in one simple question that we ask on every project: what should your consumer recognize from the very first sip or the very first bite?

Our four-step process

01

Brief

It all starts with listening. Your marketing objectives, your positioning, your technical constraints (target cost, regulatory constraints, labeling), your timing: each parameter goes into the initial specifications, because each one closes off or opens up formulation options.

02

Formulation

The assigned flavorist translates the brief into a formula. Several proposals are submitted to you, with their technical data sheets. Iteration is encouraged: we would rather go back and forth five times and arrive at the right signature than deliver a compromise on the first try.

03

Application

The formula is tested in your actual product matrix. We check stability over time, behavior during pasteurization, in-mouth performance and interaction with other ingredients. A flavor can be perfect in the laboratory and deteriorate in an acidic, fatty or heat-treated product. This is where that shows up, before any industrial investment.

04

Validation and transfer

Once the formula has been validated, we prepare the transfer to production. Technical documentation, quality control protocols, retained reference samples: the first production batch is comparable to what you approved, and will remain so for every batch that follows.

Personalized support, a single point of contact

At Synaco, your project does not get passed around between three departments. A single dedicated contact supports you from the first conversation to industrial delivery. They know your history, your previous trials and your sensory preferences.

This is a direct result of our size and our single-site organization. The gain is measured in time: fewer files restarted from scratch, less information lost between contacts, and decisions made during the call rather than after internal approval.
